I had this left over pie crust from the Hamburger Pie I made the other day and I didn’t want it to go rotten. So, I went scouring around on the internet an I ran across a blog,
NO, I can’t remember which one because Im such a blog junky can’t keep em all straight
and found this unique recipe for pie crust cookies.. I thought well, coolios! I made them this morning and they were super super easy and Mr L. really liked em.. I think they would be more like something you might make when you’re looking for just a hint of sweetness but don’t want to take the time to make anything elaborate..
Since they are made from pie crust they don’t come out like a normal cookie would.. They are more flaky and crunchy but good just the same..
Here are some of the supplies you’ll need , Butter, Pie Crust, Sugar and Cinnamon.
Next, lightly flour a small surface.
Roll Pie Crust out over lightly floured surface.
Then, lightly brush pie crust with some melted butter
Mix up some Sugar and Cinnamon in a small bowl and sprinkle across the pie crust.
Next, use cookie cutters to cut into desired shapes. Since we love dogs, I did little fire hydrants, a couple big hearts and a few paw cut outs.. Place on a lightly greased cookie sheet and bake for 10 minutes at 400 degrees. I didn’t use any shortening on my cookie sheet. I used Reynolds Non Stick Foil and it worked like a charm..

1 Pre-made Pie Crust not in the tin
Couple pats of butter to be melted
Few teaspoons of Sugar
Few teaspoons of Cinnamon
Lightly flour surface
Roll out Pie Crust on floured surface
Lightly brush on melted butter ontop of pie crust
Sprinkle mixed Cinnamon Sugar atop pie crust
Use cookie cutters to cut out desired shapes
Place on lightly greased cookie sheet
Bake at 400 degrees for 10 minutes
