When I have made boneless, skinless chicken breast in the oven in the past I’ve always dried it out no matter what I tried. It just dried out. My poor husband. But, because he loves me he always ate it without complaining. I recently found a new way of cooking this chicken in the oven and it comes out so juicy that my husband keeps asking for it! I hope you will enjoy it too!
Ingredients:
Boneless, Skinless Chicken Breast
Olive Oil
Low fat Cooking spray. I use Canola Oil spray
Seasonings of your choice
Parchment Paper
Directions:
Pre-heat oven to 400 degrees and put the rack in the middle.
Spray the inside of your baking pan with your Low Fat, no fat or good for you oil of choice cooking spray.
Rinse chicken breast and pat dry.
Lay chicken breast in the prepared pan and baste with Extra Virgin Olive Oil
Sprinkle on seasonings of your choice. Here I used Mrs Dash’s No Salt Garlic & Herb
Next take a piece of parchment paper and spray one side of it with your non stick spray
Then take the parchment paper, oiled side down and wrap it around your chicken .
Place in 400 degree oven on middle rack.
Bake for 30 to 40 minutes depending on the size and thickness of your chicken breast.
Remove from oven and let sit five minutes for the juices to settle.
Serve with sides of your choice
