Fifty – Nine Years

Today we celebrated my husbands fifty-ninth birthday. We had a nice day together that we also shared with our best friends Bill & Linda. 

The temperature outside was a balmy thirty some odd degrees but the love shared on this day made for a nice warm and cozy day together celebrating my husband. I had so many thoughts and feelings when I woke up this morning, mostly, thankfulness. We decided that we would stay home, I would make a nice dinner and we’d have some birthday cake and that’s exactly what we did and I thought I would share some photos of the day with you.

I forgot to take a photo of the dinner we had. I made a nice ham along with some green beans, a salad and some biscuits. I did however take a video of us singing Happy Birthday to my handsome man. Yeah, don’t turn your sound up too loud because we sound like a few suffering cows. What can I tell ya, singing is not our strong suit.

And of course even though with time boys turn into men they are still always little boys at heart. They look like two little boys playing in the backyard. Bill is messing around and Lou has this intent look on his face while he’s watching Bill play with my salt and pepper shakers as if they are nine years old again and Lou can’t wait to see what Bill will do next.. LOL

Saturday Snapshots – My Week In Review

What a busy week! As usual my intention was not to have such a busy week but it never seems to go that way….The beginning of the week consisted of running errands almost everyday in this unbearable heat. Here in South Carolina, all week it’s been in the high 90’s again with heat indices of 105 -110. Todays heat index was 117! Yeah, Im SO ready for fall and winter.

Thursday found me in a room that looked like this

And of course once they put you in a room that looks like this they let you sit there and wait and wait and wait some more and well, I am not good at waiting. It’s something I am working on with God. Learning to be more patient. It’s definitely not a strong point of mine so then I began to look like this

That’s my “if the doctor isn’t in here in five minutes I’m leaving I don’t have anymore time to waste” look.

But at least my outfit didn’t look half bad. Yeah I still don’t know how to take an outfit of the day shot.

I did manage to make a good meal this week. It’s my own healthy version of chicken stir fry.

That you can’t go out in the rain and then run at mach speed into the house where you hit the tile floor because your legs will fall out from underneath you and you will slide across the floor into the table.. Yep, he did that.. Nope he didn’t get hurt and yes I laughed so hard I hurt my gut….

I spent the morning on Friday trying to make some sort of sense out of my craft/office/makeup room. I got 90% of it organized. Just some things left that I need to find homes for.

This is the office/craft portion of the room. Right now I’m just using the furniture I have on hand. Eventually I want white.

Didn’t come out too badly and at least I have a space and everything has a place to live for now..After I finished this without hurting myself surprisingly, I went to change that garbage bag you see off in the corner there and promptly pulled all the muscles in my chest on the right side so, once again I am off to the showers to see if I can make it feel better..

Heart Healthy Best Five Bean Salad

As per request here is the Five Bean Salad that is now a staple in Lous diet. He seems to love it although he did say the onion can be a bit overpowering so you may want to keep that in mind if you happen to make this.

Ingredients

1 – 14.5 ounce can of Green beans, rinsed and drained

1 – 14.5 ounce can of Wax Beans, rinsed and drained

1 – 14.5 ounce can of Garbanzo Bean (AKA chickpeas) , rinsed and drained

1 – 14.5 ounce can of Kidney Beans, rinsed and drained

1 – 14.5 ounce can of Black Beans, rinsed and drained

1/2 Cup Chopped Red Onion

1/2 Cup Chopped Celery

1/2 Cup Salad Oil ( I used a combination of Saflower, Sunflower and Canola oils. Loaded with Omega-3 fatty acids. Good for the heart)

1/2 Cup Vinegar (I used red wine vinegar)

1/2 Tsp Black Pepper ( I used fresh ground black pepper)

Directions :

In a large bowl mix together all ingredients well. Then refrigerate overnight or at least eight hours so all the flavors can marry together and the beans can slightly harden..

Serve as a meal or a side dish..

Enjoy! 

Day In the Life – Monday

And so it’s Monday.. Did you have a good day? I had a busy day as per usual but a good day. Here are some clips of my Monday. 

It began seep deprived as I was on the phone with a friend last night until almost One AM and as much as I wanted to go back to sleep when my alarm went off at Six AM my body had other plans as in, it wasn’t going to go back to sleep. So I dragged my butt out of bed at Seven AM after having checked my E-Mail and my Facebook on my phone and hopped in the shower.

After doing all my girly things like putting on my makeup for the day, styling my hair and getting dressed it was time to feed all five of my four legged kiddos. Once they ate I left the house around 8:30 AM and headed to the post office to mail out a package to one friend and some Valentine’s Day cards to other friends. 

After that it was off to Bi-Lo (grocery store) to pick up some dog food and fiber for Toby and Sarah and then across the street to CVS. Here’s what I grabbed at CVS.

I took my daily nap for about two hours, yes I was still tired and when I got up I had some of that Northern Bean and Ham soup I made over the weekend, I did my Scripture writing for the day and then it was time to feed the four leggeds and one two legged (yes, my hubs) dinner. Tonight’s dinner was easy. I just fried up some chicken tenders in a pan and put it in a salad for the hubs who is a truly minimalist when it comes to his salads. All he really likes in them is lettuce, tomato, some black olives and maybe once in a while green onions when I have them. We didn’t have those tonight. Still, it looks pretty good to me.

Tonight I’m going to sit down and read the Mass Scriptures for the day, pray my rosary, spend some time in prayer and do an examination of conscience because I have to get to Confession tomorrow night seeing how Ash Wednesday is this week. Can you believe how early Ash Wednesday and Easter are this year!

Something Yet Nothing….

Today was the same kind of day that I seem to be having for about the last two weeks. Lots of things I could accomplish yet I accomplish nothing. Although, I did manage to do a few things today one of which sadly, turned out to be a waste of food and energy but I had to try.

As most of you know and for those who don’t, I lost my ability to swallow solid foods fourteen years ago. (cause unknown despite many tests). Because of this I survive on very little nourishment (thanks to God) and a lot of soups but I still have issues with spices, gluten etc. So, cooking for me is not an easy task and when I find something that tastes good, I can swallow and sits well on my stomach I stick with it. The problem with this is it’s very repetitious and after eating it so many times you literally can get to the point that even the thought of one more spoonful is enough to make you projectile vomit.

Today I tried a new recipe for a gluten free cauliflower and quinoa soup. The good part, it was easy to make, quick to cook and would have, yes I said would have, tasted awesome! except for one thing. The recipe called for Thyme. I’m not a big fan of thyme but I made it according to the recipe although I only put in a quarter of the thyme it called for. Unfortunately that was enough.. it ruined the whole pot of soup. All you could taste was thyme and it left and after taste of thyme. I ended up pitching the whole pot down the toilet. Food, time and energy wasted although maybe it wasn’t all a waste because now I know for next time, to skip the ‘thyme’…

And then there is …..Toby who I am slowly beginning to call Dennis as in “Dennis the Menace”

He’s only a baby and needs the attention of a 9 week old pup and of course we are potty training. Lou had to run out to the store today to get his medications and so that left me with the little ankle biter for a while. Im beginning to think he waits for Lou to leave before he starts his menacing. I”ll skip the details but lets just say it included some carpet cleaning.

Then….

Jake here decided to bleed and I had blood all over the tile floor. At first I didn’t know where it was coming from but quickly (thank you God) found the source. Jake has a little wart type thing on one of his back feet and he must have chewed it and it bled. For something so small it sure bleeds a lot. I stopped the bleeding and cleaned up the floor.

One of the highlights of my day was a nice long(until I saw the blood) phone conversation with a good friend(thanks Trish). That was a nice break from all the thoughts floating in my head as of late. Another was, I didn’t have to cook dinner. Last night I made a huge ham and invited Billy and Linda (our best friends) over for dinner and there is plenty! for left overs.

Once I got all the dogs fed, the dishes loaded in the dishwasher, counters and stove top cleaned up I made myself a nice cup of coffee , sat down, turned on a cheesy Halloween horror film from my childhood and worked on my crochet some.

20151029_210652And that there folks was my day… Tomorrow I did want to get out and run some errands but because of the soup that flopped today I’ll have to stay home tomorrow morning and cook again. I”ll be trying another soup. This one is a gluten free white bean and ham soup. I’ll let you know how it turns out!

IT'S 2 AM! LET EM' EAT CAKE!!

Hello again my dear readers!

So, what do most people do when they can’t sleep? Well, usually people will watch television, surf the internet, surf through their newsfeed on Facebook, play a video game etc. All things that of course, will not help us sleep.

Here’s the thing. My husband is not ‘most’ people. Saturday night he couldn’t sleep which sadly, is not out of the norm for him due to his back pain. Usually, yes I said usually, he will get on his PS4 which like most people will do absolutely zero to help him sleep but not this past Saturday night. No, this past Saturday night my husband had a craving. Who says men don’t experience menopause? I’m here to tell you, yes they do!

At two o’ clock in the morning, this! is what my husband was doing…

Yes, thats right.. He was baking a cake! That I must add, he made from scratch. No box stuff for this guy.. He loves to cook and bake. My body just wishes he wouldn’t do it at two am but, you do what can when you can even if it’s two am in the morning!  Right here he was making the frosting, yes that was from scratch as well.. 

He made this beautiful orange sheet cake using “Clementines” in the cake batter and using the rind in the icing.. He’s so creative with food when he’s able. .I’m a good cook but I must concede my husband has always been a better one. I’ve always said he should have went to chef school.
